There are many working alpeggi in Leventina, run by the boggesi, a co-operative of cattle owners. For this reason most of the time it’s not possible to buy the cheese. The cheese is divided amongst the owners, who then sell it. These are semi-soft full fat cheeses made from boiled untreated milk, living proof of the excellent quality of the alpine flora of the pastures at high altitude (up to over 2000m). These itineraries have been chosen because the alpeggi sell their cheese to the public, from the first week in August.
The first route (Variante A) starts at Airolo, on the Passo della Novena. After Acqua, near Manio (about 14 km) the road reaches Alpeggio Manegorio. Still heading towards the Novena, at the beginning of the hairpin bends you’ll see Alpeggio Cruina to the right.. They produce Cruina cheese made from full cream milk, which can be bought by weight. It is also possible to buy ricotta, butter and büscion.
The second route also starts from Airolo, but this time in the direction of the Gotthard Pass. After about 11 kms there’s a parking area on the right, known as ‘hunters’ parking’. Keep going on the unsurfaced road until you get to Corte Cassina del Buco and on the footpath the Alpeggio Fieud –milk processing centre for the surrounding herds. This centre produces semi-soft full fat cheese known as FIEUDO. The road then continues and climbs up to the Ospizio at the top of the Gotthard Pass. Keep going to the right towards the Rifugio Consorzio Ripari Valangari and after another 2.5 kms you’ll get to the Alpe Sorescia. Then a further 6 kms to the Rifugio Schiena del Asino (open only in the summer) and then Alpe Pontino. Both produce full fat, semi-soft cheese.
Try going back by the old road known as the ‘tremola’(bone shaker), laid in 1830 by the engineer, Francesco Meschini.
Passo del San Gottardo
Museo Nazionale del San Gottardo, housed in the old coach house built in 1834. It used to be a hotel and customs point for coach travellers. Airolo: Museo forte Airolo (about 1.5km from the town) on the road to San Gottardo. Exhibits of old arms and documents relating to the history of the fort. Gottardo: La Claustra. Unique new Conference Centre built in an ancient military fort.
